Today I'm going to show you how to make this super easy and awesome banana bread. My kids absolutely love this, and my husband does too. This is my favorite thing to make when I have bananas that are starting to get soft and brown, and need to be used right away. You can also freeze your too ripe bananas and just thaw them out when you're ready to make bread.

Ingredients

  • 1 /14 cup sugar
  • 1 stick butter
  • 2 eggs
  • 1/2 cup milk
  • 3 over ripe bananas
  • 1 tsp vanilla extract
  • 2 1/2 cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 1/2 tsp cinnamon
  • Non-stick baking spray or extra butter to grease the loaf pan

Instructions

  1. Preheat your oven to 350F. In a stand mixer with a paddle attachment or using a handheld mixer, cream together your butter and sugar. Mix in your eggs.
  2. Then add in your milk, bananas, and vanilla. Mix them until combined and the bananas are all mashed up.

  3. In a separate medium sized bowl, add your flour. Then add in your salt, baking soda, and cinnamon, and mix all the dry ingredients together with a fork. Then add the dry ingredients into the banana mixture slowly, mixing together with a spoon or spatula until just combined.

  4. Don't over mix, or your bread will be tough. It should look like rustic and lumpy. Grease your loaf pan with non-stick spray or butter, and pour in your batter.

  5. Smooth it out on top, and pop it in the oven. Bake it for 60-70 minutes or until it's brown and a toothpick inserted in the middle comes out clean.
  6. Let it cool in the pan for about an hour, and then remove it from the pan. Slice it up, serve with extra butter, and enjoy!
