Mini Flatbread Pizzas | Easy Kid Lunches

As we're getting into the long last days of summer break, it's getting harder to convince my kids that peanut butter and jelly sandwiches are great to eat every single day. Since I work from home, I don't have the time in the day to make elaborate lunches. Also, my kids miss school lunches since they almost always include dessert and chocolate milk, and I keep the sugar intake to a minimum when they're at home. So, to spice things up a bit, I came up with these mini flatbread pizzas! They're super fast to make, involve minimal ingredients, and no one in my house complains about pizza! Plus, you can use other ingredients like leftover chicken, sausage, pineapple, mushrooms, bbq sauce, etc to customize your pizzas to taste. Or, you can even set out a variety of ingredients and let your kids build their own mini pizzas! Here's what you'll need to make your own pepperoni and cheese mini flatbread pizzas.


  • Small flatbreads. I use ones that are meant to be folded and just cut them in half.
  • Pizza sauce.
  • Pepperoni.
  • Mozzarella cheese.
  • Non stick spray.
  • Optional: any other toppings you'd like to customize your pizza.


  1. Preheating your oven to 350F. Spray a baking sheet with your non stick spray. 

  2. Take out however many flatbreads you need and cut them in half if necessary. Place them on the cookie sheet, and put it in the oven. You're going to bake these for 1 minute. Take them out, flip the flatbreads over, and bake for 1 additional minute. Don't skip this step!!! This is what makes your flatbreads crispy and perfect as thin pizza crusts, rather than soft bendable flatbreads.

  3. Pull them out of the oven and let them cool for a few minutes. In the meantime, go ahead and start grating up some cheese. 

  4. Now here's the fun part! You can either do this yourself if you're in a hurry, or let the kids build their own pizzas. Add a little sauce and spread it around with the back of a spoon. Then add on your cheese.
  5. Finally, put on your toppings of choice! My kids love pepperoni, but the toppings are endless! Just make sure that any raw meat or veggie topping you put on is pre-cooked, due to the short final bake time. Pop your pizzas in the oven and bake them for 4-6 minutes onto the cheese is bubbly and that pepperoni just starts to curl at the edges.
  6. Take your pizzas out of the oven, let them cool for a minute, and serve!

I hope you enjoyed learning how to make these mini flatbread pizzas! My kids actually thought these were pizza lunchables at first, and that gave me a great idea. If you pre-crisped the flatbreads and packed the sauce, cheese, and pepperoni separately, you can easily send these to school as a homemade pizza lunchable that's much healthier!
