Preheating your oven to 350F. Spray a baking sheet with your non stick spray.
Take out however many flatbreads you need and cut them in half if necessary. Place them on the cookie sheet, and put it in the oven. You're going to bake these for 1 minute. Take them out, flip the flatbreads over, and bake for 1 additional minute. Don't skip this step!!! This is what makes your flatbreads crispy and perfect as thin pizza crusts, rather than soft bendable flatbreads.
Pull them out of the oven and let them cool for a few minutes. In the meantime, go ahead and start grating up some cheese.

If you pre-crisped the flatbreads and packed the sauce, cheese, and pepperoni separately, you can easily send these to school as a homemade pizza lunchable that's much healthier!
