Red Velvet Oreo Cheesecake Truffles

- Ready to eat Cheesecake Filling
- Powdered Sugar (not pictured)
Start by grabbing a bowl and a plate. Then take your oreos, and split them like this. Throw the side with the cream into the bowl, and put the plain cookie side on the plate. You can use as many or as few oreos as you’d like. 10 oreos makes approximately enough filling and coating for 10-12 large truffles.
Take a meat tenderizer, or my special little trick, a potato masher, and crush up your plain cookies into a rough powder. This will be the coating for your truffles. Now grab a pastry cutter or a couple of knives, and chop up the cookie halves with the cream.
Next you’re going to scoop up a big dollop of cheesecake filling, and toss it in your bowl. Mix it together with your crumbled cookies. It’ll be fairly thin, so start adding powdered sugar.
Keep adding until you have a fairly thick mixture, with a slightly sweet taste. You’ll need between 1/2 cup and 1 cup. When you have the filling how you’d like it, take a tablespoon scoop of the filling and pop it onto the place of cookie crumbs.
Roll the truffle around until it’s fully coated, and make sure it’s shaped into a ball. When you have all your truffles done, pop them in the fridge and keep them chilled until ready to serve.
