No Bake Energy Snacks

I love no bake cookies, but I do feel pretty guilty about the butter and chocolate in them.  When I came across this recipe, I was really intrigued.  I wasn’t 100% sold until my kids and I both fell in love with them.  I apologize for the not-so-appetizing picture, but this recipe was so good that I had to share it anyway.  You can get really creative with the recipe, but here’s what we’ve been using.  This makes a double batch, which means we have some to put in the freezer and pull out when we want them.  So far, they haven’t lasted an entire week.

  • 2 cups rolled oats
  • 1 cup peanut butter
  • 1 cup ground flaxseed
  • 1/2 cup chocolate chips
  • 2/3 cup honey
  • 2 teaspoons vanilla

Mix the oats, ground flax seed, and chocolate chips in a bowl.

Mix up the ingredients with a wooden spoon until everything is moist. Let it sit in the fridge for a half hour or so before rolling into 1" balls.
