Berry Dessert Pizza Recipe

Everyone loves pizza for dinner, but what about pizza for dessert? It’s not what you think – you won’t find gooey mozzarella, tangy tomato sauce or rounds of pepperoni on this pizza. Instead you’ll be treated to a cookie base, creamy sweet sauce and fruity topping.

The pizza base is similar to that which you would make for a cheesecake – a mixture of Graham Cracker crumbs and butter. If you don’t have any Graham Crackers, don’t worry – you can use any sort of cookie in this recipe. Get creative and use chocolate chip cookies or even Oreos.

The pizza sauce is a simple lemon no-bake cheesecake mixture. Unlike some no-bake cheese cakes, this recipe uses absolutely no raw eggs, so it’s suitable for the whole family.

An assortment of your favorite berries – I used strawberries sliced in half and a single whole raspberry – are used as healthy toppings, with a good swirl of dessert sauce and colorful sprinkles.

Recipe Instructions

Mix together the cookie crumbs with the melted butter. Stir well until the crumbs have absorbed all of the butter then tip the mixture onto a greased baking sheet. Using your hands, shape the cookie mixture into a flat circle – this will be your base. Place in the refrigerator to chill.

In a bowl, whip the cream until it thickens. Add the cream cheese and carry on whipping until the mixture is combined. Stir in the icing sugar, lemon juice and vanilla essence.

Remove the cookie pizza base from the fridge and spread the cream mixture on top just like pizza sauce.

Chop the berries of your choice into small pieces and use them to decorate the pizza. Drizzle on your favorite dessert sauce and finish with colored sprinkles and dollops of whipped cream.
